Best abrasive for removing finish

My wife has an old dining room hutch that needs refinishing.  She wants to remove the top protective coat and refinish it.  I think it is a varnish or shellac.  I told her that I have some nice German sanders with dust extraction that can do the job  [big grin].  I have an RO90, RO150, and an ETS150/3 to do the job.  What Festool abrasive and grit should I use?  I want to preserve the stain, but redo the top coat with a wipe on poly.

 
Granat, 220 grit or finer.

Do not sand completely through the finish, and sand marks in the stain will show in the new finish.

I think Granat is a good all around choice.  But I saw the Vlies line of abrasives.  Would that be more targeted to my situation?
 
The Vlies will work to degloss the surface. It is more flexible than the other papers, might be harder to keep the surface flat.
