I'm going to be using some Platin 2000 paper (after stepping up through the lower grits) to get a super-fine finish on an oak cabinet I'm doing, and I was wondering what would be the best pad to use (hard, soft, etc.) on my RO150?

Second, what is the difference between the two different soft interface pads for the RO 150: 499257 (which includes two pads) and 496647 (which only includes one, and is more expensive)?

I would use the standard soft pad with Platin. The single interface pad is thick, I think 20mm. The dual interface pads are thin, I think 5mm.  I recommend the thinner.

The Platin disc itself is backed with foam, about 4 or 5 mm thick. This gives you so much cushion that I don't think it really matters which pad you use on the Rotex. But as soft seems to be the goal, the soft pad seems logical.
