Does the Domino create an arched bottom in the mortise trench? Or is it flat?
And does this matter as far as glue-up strength is concerned?

Flat, the strength comes from the glue area on the various sides of the dominos.

I believe it is SLIGHTLY convex at the bottom. The important fact is the sides are parallel. The tiny amount of space at the end is negligible and as Steve says the strength comes from the large face grain surfaces of the tenon.
