I've been thinking if you make the base a bit wider, and add the 45'? sliding supports at the end of the tables, it would not need to be a full 96" on the wings.  Just my thoughts,

My first table had was 7' long and had sliding rails on the end at 45 deg.  I like it because it gives you a better platform for crosscutting short pieces that would normally fall between the other sliding rails.  Table 2 I just put a couple of stationary ply between two sets of rails.

Kingpen, if the wings fold down, how can we keep those 45's in control?  I got the other design (3?) almost complete in sketchup with lists of materials from CutList.  Looking for ideas here...
 
What if they swivel rather than being fixed at 45, then they can pivot back as needed?
 
Maybe a simple catch like the child proofing latches or a bullet catch on the underside of the support?
Bungee cord?  Figure 8's?  flip stop on the end that would catch on the dovetail way?

Brainstorming in public.  Could get dangerous.

 

 
I've got it!  You could double barrel hinges and then the wings could go up or down!

 
Just posted a revision to the sketchup file in the 3d warehouse which is more faithful to kingpen's dimensions.  I did not put dimensions on everything, because some things you just got to fit on the thing that you are building, and I dont want to take responsibility for screwups.  Besides, its a good mental exercise to figure things out.  But the basics are there, and you should make sure that everything fits as you go along.

As to making the table with the wings down in the closed position, my intuition is that why mess with a good thing?  I like this version.  Just think of how blown away we all were when we saw the video.  Changing it seems to be rife with possibilities of a screw up... the wings would have to be shorter, which could be compensated with end sliders set at 45, but how do you stop them from sliding open at while at rest?  Then you're exposing the sacrificial risers to getting caught on things as you move the table around, and the wings will have to be wider so that the skirt will not get caught when closing it.  I just exhausted myself with negativity, and why go through the trouble, when its perfectly good as is?  Whoever feels brave, the sketchup model can be modified to your heart's content... please share.
