Water proofing or sealing the MFT top.

I have my MFT on my back patio for the "summer" which has been wetter (climate change) than usual. I am a bit envious of my fellow garage or shop owning members. While i "know" that some people would not dream of working with a cup of coffee or a road soda while working, i enjoy a bit of hydration while working. Of course the reason my dad told me not to put beverages on the work bench is because inevitably they will spill. . .

Regardless if it's coffee or water or just the morning  dew, I was a bit concerned when i noticed that a small section of the work surface  had "bubbled up" from moisture. . .  While i was reluctant to play with it, it was imperative to have a flat working surface and after quickly flattening it out with the rotex with 180 i decided to go ahead and seal the whole table top with oil modified polyurethane. while i foam brushed on the first coat, i'm thinking of spraying some poly on the bottom and sealing the holes. I am of course a bit concerned with beaing able to fit my bench dogs etc in the holes if the swell from the poly. I don't want to sully the holy rails!

Any thoughts or experinece from the community on the effects, either pro or con regarding finishing the MDF on the MFT,
or others tricks, (besides covering with a water proof drop when not in use) in maintaining a highly moisture sensitive surface such as mdf?

I dint think a water proof drop is the answer it will trap moister unless its breathable
