Cabinet refacing - Burn through with P800?

Hi everyone, first post here! I've benefited a lot from FOG and hope to contribute in return. For now, a question about my latest project for clients wanting to get rid of their oak and get it painted white.

5 built in cabinet sets in a kitchen and extra living room, ~105 cabinet doors & drawer fronts + all the cases + new crown + additional units.

Question: will using my ETS150 and RO90 with P800 actually help between coats, or would I risk burning through my finishes? I'll be spraying HVLP in this order:

Sand to 220
General Finishes Stain Blocker primer
Aqua Coat grain filler 1-3 coats
Stain Blocker 2nd coat
General Finishes White Poly 3 coats (they have many energetic kids)

I've used P400 in between coats of the High Performance and it is to easy to burn through so I haven't been anymore. But with the scale of this job, would P800 really make a difference? Also open to critiques about my process.

Aside, you can see they are having me install a simple framework around each door to update the look.
