Hi I'm new to the group, I have desperately been trying to get hold of the Kapex 120 but everywhere is out of stock and not available until October, does anyone know why?

Lee Valley Tools (US) still has limited stock. Lee Valley Tools (Canada) is said to have stock starting next week or so, according to its online availability info.

EDIT: Another reason might also be that the demand for the REB (new motor) has become much greater than expected since many had harbored doubt about the older EB model given its motor issue. Some of those decided that time was right to get a Kapex which is among the best miter saws money can buy.

Due to all the measures the German government took to control the COVID crisis, a sizeable part of German manufacturing has been shut down.

I had ordered the Kapex 120 with the UG set and extensions on special from local dealer in San Diego. Went in early August and was told shipment delayed until September 1; OTOH shipment of STM 1800 cutting table should also arrive Sept 1, a month early.
I think a lot of people have signed up for the special, that may have made stock of the saw itself more scarce perhaps?

Festool Nirvana has the Kapex in stock (I just bought one from them a few weeks ago).  No tax, no shipping, and they got it to me quicker than any online retailer I've ever dealt with.  Chip, the owner(?), is super easy to deal with - very responsive and very patient with stupid questions...
