Filling plywood joint gaps

Hi guys, I have about 30ft of plywood countertop that is jointed pretty nicely. There are a few spots where .5mm exists after the glue dried, etc.  It's the countertop for a coffee shop so it will need to hold up to water/coffee from all angles hence I'd like to be extra cautious in doing it right the first time. It's radial sawn white birch sealed with Odies. I just need something to push down into the joints and make sure water isn't going to seep into it and swell the wood.  Bonus if it doesn't need to be sanded and I can just buff over it and reseal.  Thanks

Timbermate is waterbased, you have to seal it.

Famowood is solvent based, would have to be sanded, seal after sanding.

Timbermate looks like it will work. I plan to put more Odies over whatever I use.

Another to look at would be Seamfil. I would also question your use of Odies in this situation. Have you used it in a similar scenario, plywood veneer and constant cleaning? I like oil finishes and have used Rubio a lot and Odies with mixed results. Sounds like more of a 2K poly finish is needed in this situation.

I'd try using some West Systems epoxy and squeegee it across the surface defects. Once cured, sand it down to the natural birch surface and apply your topcoat of choice.  West recommends using 105 resin with 207 hardener for the clearest, moisture resistant coat.
