Gen Finishes Enduro Var

I’m applying the Enduro Var Satin to a large two tiered coffee table. The top
Tier is getting 5 coats. Is that enough to avoid water spotting. The wood is American black walnut. The client isn’t very careful with her furniture.
 
Anything over three coats is a waste if they are applied according to instructions. It wont improve durability. Key is allowing a long time to cure before it is 'mistreated'. Manufacturer says 21 days.

I tried this stuff once and didnt like the way it interacted with the grain, especially on a big surface.

You may have made your mind up, but I would use a hard wax oil. I've used Fiddes on many kitchen work tables etc and nothing has ever marked them - water, curry sauce, red wine, hot coffee....
