Gluing 3/4 to 3/4 stock cvg dug fir

Architect has spec'ed veneering 3/4 to 3/4 clear vertical grain dug fir together for a workout studio's cabinetry, cubicles and some table tops. Suggested other methods, thin veneer, 6/4 stock, etc...I am concerned about movement. How would you approach this application?

What parts will be that thick?  Surely not the actual cabinet boxes?

Why not 3/4 plywood for the places it can be used?

Yes, I am suggesting 6/4 for the frames and plywood with veneer were its not visually exposed.
