I have the good fortune to have a lot of stainless 410 nuts to marry with the 303/304/305/316 fasteners I use. There needs to be that wide divide between stainless alloys as 304 nuts used with 316 fasteners can still cause galling problems. Stainless 440 nuts are also good but they do rust and they are magnetic.
Even if you're mixing different stainless alloys, the best general solution for eliminating any galling issues is to just apply some Nevr-Seize to the threads of the stainless fastener. Really, nothing works better, from stainless fasteners to header bolts. If you purchase a tube for $10 it'll last you for 20 years. I'm still working on the 1# can I purchased over 40 years ago. I also use it on aluminum wheel lug nuts, between the high disc brake temperatures and the water & corrosion issues it'll make swapping tires & wheels a lot easier.
