Good evening.  I would use two tracks, one for each door with the track meeting in the center of the opening.  Leave about 1/8” space between the two tracks so when you mount the doors and close them to meet in the middle you have “adjustment” if you need it.  You want this so both doors meet perfectly in the middle.
