How to un-warp MFT table top?

Well I guess the title tells the story. I thought I'd stored my MFT in the dry, but the damp has got to it. There's a 1/4" hump across the middle of the tabletop. What can I do? And also, what should I have done to prevent this. Sealer coat, maybe?
This winter has been wet and wet, the air is very damp, but that's England for you, so how can I stop this happening again.
 
If it’s only a 1/4” hump then I would just sand it flat. I actually sprayed oil base polyurethane on mine and it has been great. I also have my MFT placed in my garage. HTH.
 
You might reverse the top and make some braces under the bottom to bring it back to level if you can spring the top.  At 3/4" it might give you the flex you need.  But given you have holes across the table, you should be able to glue a board between a row of holes underneath as an option and clamp it down while the glue sets.

Alternatively, buy a piece of lightweight MDF and a 20mm bit and copy that top to a replacement.
