Any places to visit while here in Ireland?
We are in Dublin and later Carrick on Shannon.
 
Based on my experience, having visited both Guiness brewery and Jameson distillery, I would say that if you can only make it to one, do the Jameson tour.  I too agree that the Guiness brewery was a bit too "commercial", while the Jameson tour really brings you behind the scenes.  But that was 10 years ago, so things might have changed since.

It's not Ireland, but yesterday my wife and I had St. Paddy's Day lunch at The Landmark Tavern, one of the oldest Irish Pubs in the country - 1868. They haven't changed a thing since its opening day. Cloth tablecloths and knapkins with original Irish cuisine done with care. Friendly staff and great atmosphere.  http://www.thelandmarktavern.org

As far as the real Ireland...I recommend the cliffs of Castle Barr and an Irish Breakfast in any farm town.
 
Just drive around the country.  It is beautiful.  It is a color of green that you don't get in the states.  Might be out of the way, but we went to the Waterford Crystal Factory tour while there.  That was interesting just from a craftsman's viewpoint.  Enjoy your trip.
 
Tried both tours and I'm well on my way to being a certified alchoholic if for just the week of vacation. Thank you for the fine tips :)
Lovely wood work here in Dublin in just about every pub I've stumbled into so far....the states are really lacking in comparison!

Kilmainham jail tour evening time
Howth seaside town (dart journey from the city 20mins)
Bull and castle 5-8 lord Edward street best beer and food in the city
Viking splash tour always fun
Leo burdocks just beside Christ church traditional fish and chips
