I'm going to put a 20" x 24" chunk of granite next to the egg.  The remaining counter will be a hinge top to a bin under the counter.  To max storage I'll put a drawer on each "end side"

Space the Egg away from the bottom wood supporting it or you will get burn marks or even charred wood.  I've rebuilt and refinished 2 factory Big Green Egg tables , both of them the older Cypress models. Cypress will need some protection against rot since not every board is that resistant to rot.

I ordered a 15" x 24" piece of granite for the egg to rest on.  I also ordered a 20" x 24" piece to fit in counter top.  I had read that it's the hard grain that's rot resistant.  The majority of my cypress has sap wood.  Needless to say everything will be clear coated.  Probably with a "Sikkens" Cetol 23 UV product.

It's also a way to re-purpose projects that didn't go so well.

. Thank you.  It's finished with Cetol Marine Teak Finish. That helped even out the board colors/hues.

My new neighbor is a painting contractor, so I asked him about exterior wood clear-coat finishes.  He said the Sikkens Cetol is the only one in CA that has UV protection.  I had never heard of Cetol before that and now you mentioned it.

Is it easy to put on?  Can I spray it?
I'm looking for as satin a finish I can get.  Like a rubbed look.

I have the wheels and casters on the cart and it's stable and level.  I was concerned about stability with a narrow wheel base when mounting them inboard.  Not a problem at all.

. I brush Cetol on. I suppose it can be sprayed , but others would know better than me.
If you don't put the Cetol Clear on top of the tinted finish, you get a Satin Finish.
Glossier finishes require the Clear over the base.
For your application , you can always dull the Clear with gentle rubbing if it's too glossy after you apply it.
 
Some glossy sealed finish would aid in wiping off any meat juices.

This is the right storage compartment.  It can be accessed from above via a flip top counter.  On the side is a shallow but tall drawer.

Yes, the wood splits.  Probably because I am very impatient and it starts burning from too much torch.  I keep a leather glove handy to swat the flames out.

Here the right cabinet has been set in with some natural cypress set around it.  The top counter and bottom shelf will be natural cypress.
