Laminating MDF

Guys, if you are, on the other hand, working with melamine as opposed to mdf, is there any need to put plastic laminate over the back of the doors?

Yes.
Melamine is sprayed onto the substrate, which is why the cheap ones look textured like wood chip wallpaper  [eek] Even if it was melamine faced MDF, a superior product, it would need a balancer to prevent warping. It's just the physics of the thing, odd numbered layers remain more stable as a rule.
