I am in the process of building a Maple countertop to butt against an existing granite countertop.  The finished thickness will be 1-1/8" to match the existing granite.  The overall width will be 39", which will leave about 13-1/4" overhang.  The overall finished length of the countertop will be around 100".  My question is, will I need to support the overhang?  And if so, how?
 
By butcher block, you mean end-grain up?  If so, I would support a 13" overhang.  I would use a wide, low profile support cantilevered from the cabinet.

If not a true butcher block, I think it would be fine without additional support.
 
Like Chris, I wouldn't want to count on glue joints very far from supporting members. Heavy stuff occurs...

I believe that much overhang must pass the Australian fat bastard test.

In other words, will it support the weight of a fat bastard sitting on it?

I had the GC hang his full body weight on a door I hung with three soss hinges last week. Steel stud wall. My heart jumped into my mouth.
 
For my own I will support the overhang. I don't think it's a good idee to rely on the strenght of the grain only.

I would support the overhang.  The overhang is nearly 1/2 of the total width of the board. At some point, it would move beyond breaking point, whether the part hanging out into space or it could, if not passing Eli's weight test, rip away from the anchoring portion.
