MDF or ply?

Building a work top for assembling, etc.  Not a workbench.  I have one made with 3 pieces of 3/4" ply sandwiched together already.  More for holding stuff while working on (sanding, screwing, etc.).  Going to use dogs and clamps in 3/4" holes. Would you use MDF or 3/4" ply?  I know the Festool MFT's are mdf.  Is it the same mdf as you can get at the stores?

Depends on the construction.
Ultimately a torsion box top and/or steel/aluminum frame with adjustable feet for leveling with either a plywood or HDF top would be the best.
I think you have told us that it's quite humid there, so I would go with 3/4" plywood as a first choice for a top and build from there.
