When making a corner joint with the connectors, what is the minimum thickness one should have on the piece gets the fixed portion of the anchor -- the one you sink at 25mm (if you're using them to build a table, for example, it would be the leg dimensions as opposed to the apron)?

As it's basically a 14mm thick domino the 1:1:1 rule of thumb should apply (which would be 42mm stock, rounded/honed down to 40) for workpiece thickness. Distance to the end is also an issue as the anchor spreads toward the long sides when being tightened initially.

For a 30mm thick leg the walls of the mortice would still be 6mm, depending on the type of wood and application it might be stable enough -or- a bit on the thin side. You might get away with legs thinner than 40mm, but should do a test piece to check that they'll hold the load as a table leg is a nice lever.
