I am finishing, by large, the biggest woodworking project I've ever tackled. It's a bed with two side tables. The headboard is 84" by 33" and everything is made of incredible quarter sawn while oak.
I don't have and don't want spray gear and I've had poor luck with brush on finishes. I've now put on two coats of Minwax rub on poly and it looks awesome. I sanded the headboard to 180 grit, vacuumed, and applied a thin coat. After 6 hours I buffed it with a white Scotch pad driven by a 5" Festool sander and applied a second coat. I should have given the first coat 24 hours to cure.
I'm not sure how durable the finish will be, but it looks great.
