I’ve built a floor cabinet for a coffee station for my office. It’s two sided cherry veneered ply it has Sapele shop made edge banding What grit abrasives would you start with on the ply ? (100? 120 ? 150? ) and where would you stop going up ( 150? 180 ? ???) The public has access to it all day so it is more utilitarian than a museum piece. I’m using the ETS 125 and the finish is a 3-2-1 mixture of , Mineral Spirits , Poly , and Boiled Linseed Oil

Depends on the condition of the veneer. I’d try some 150 on a scrap first. If there are no old scratches left after that go to 220 and be done.

I would start at 180 very lightly and if you don't have 180, 220 then.  Again, very lightly.  That stuff is wafer thin and once you sand through, you'll be kicking yourself.

I would start with 220. I had some cherry ply that had very thin veneer.
