Good point about handling the panels, I have t had to break them down other than cutting a rough piece for something. I wasn’t aware of this but they mentioned that some sheet goods come in a slightly larger size than 4x8 for just this reason? Is that pretty common?

Not in home center type stores, but at actual wood suppliers it is. Particle Board, MDF, and hardwood veneered plywood generally come as 49 x 97. This is to allow for squaring and removing edges that may have been damaged during handling. Some of those products are available as large as 61 x 145. 5 x 12s are very hard to deal with though, but when you actually need them, very handy.
