Another Domino question

Hi,

I am using maple and walnut for my cutting board, 3/4" in the vertical dimension.  Does it matter if I center the Domino in the vertical plane?  And is there a registration mark to help?

why use dominos at all? I use over size boards and just glue and clamp. Then run through thickness planer for final thickness. works easier for me and saves time.

What is the blackish wood?

I would assume ebony but it seems to have a fair amount of grain.
