I was asked to build a closet for a customer. I have been using surfix oil for my shelves lately. He wants to use maple for the shelving. Whats do you think is the easiest finish that keep the maple "white" at least for now. I don't think he likes how yellow the maple sample was with the oil. I was thinking of just using a poly with no stain what do you think?
 
A water base "poly" will keep it as close to the natural color as you will get. Should maintain that "white" cold look.

I used GF Polyacrylic for a maple dresser top (edged with myrtle) that I wanted to stay natural, it didn't darken the maple in any appreciable way. It hasn't darkened or yellowed in  ~5 years.

I applied it with rags but it dries so fast that you really need to work fast. I wound up getting streaks so I needed to polish it with an Abralon pad. Operator error - a foam brush or spraying would probably work much better.

Agreed  [thumbs up].
Alternatively, you may want to take a look (make a sample) with Rubio Monocoat plus (clear). To me it has a slight white cast to the finish which could help keep the maple looking more "natural".
