The best place to search would be on youtube and do a search for Festool. Festool USA would only have information on the router insert included with the table here due to the fact that Festool USA doesn't support the use of the other inserts here.
Hopefully a helpful member will remember a specific video and post a link.

The reducing rings are all explained in the manual for your CMS-OF. They are also featured in the excellent Supplemental Manual athttps://service.festoolusa.com/media/pdf/Festool-CMS-Router-Table-Supplemental-Manual.pdf
Some of the rings are provided in regions where there use isn't officially supported so that may be where you have some confusion.

We don't have much content specific to the throat plates. However, there are a few things that you might find useful.
