Finishing interior wood of a Pella window above kitchen sink?

Hey all,
I'm installing a very expensive Pella window above a kitchen sink.
Was thinking of finishing the pine interior of the window with Waterlox?
Anyone have any other ideas?
The old window was quite water spotted from sink splash!

I have always had good results using two or 3 coats of oil based polyurethane.

If the sun comes in that window you will need something that is UV stabilized.

If you can spray the window. SWP Kem Aqua Plus.
