Zinnser Seal Coat, twice. Trans tint dye. General Finish salad bowl finish.

If the top is used as a true butcher block use mineral oil only.

+1 for mineral oil.  Hard maple will hold up on it's own ask any butcher that uses one every day and at the end of the day scrubs it with a wire brush and wipes it clean.

Generally,if i`m staining a floor,i water pop it(wet it and allow to dry),this opens up the grain and helps the stain to soak in evenly,less chance of a patchy finish
