Is the veneer paper-backed? Probably not if it's wavy, right? If so, you can spritz it with water prior to glueing it. This will soften it up, and make sure you use cauls above and below the veneer. If the veneer is particularly troublesome, go for more cauls.
As for glues, I like white glue. Not everyone's first choice I know, and once I did not use enough on a paper-backed veneer and I had problems a few months down the line, but if your substrate is stable and you use sufficient glue you shouldn't have creeping issues. Most people will tell you a urea resin glue is the best, but I get along fine with PVA glues and given their ease of use and lower toxicity, I prefer them.
