In the 8 years since this was first posted, there are even more choices. Although I am one of the ones to do the Mercel modification, I do keep an eye on the shorter cut-length bits too.
Freud, Lee Valley, Yonico, Woodpeckers all make bits that would work with it. Some are bearing-guided mortise bits, intended for use with jigs, but that can be removed, to shorten them. Others don't have the bearing.  Woodpeckers and Lee Valley even sell them with 8mm shanks. The one I use is 1" cut length, 3/4" diameter with 8mm shank. It's a normal straight bit, with brazed carbide.
I would really like to see Woodpeckers take this on in the Ultra Sheer line, giving it a spiral cut.

Thanks Race.  Being pretty new to woodworking and completely new to edge banding and Festool, I still don't have a firm grasp on how all this works together.
 
I highly recommend the Festool USA Youtube episodes where they explain a lot.
 
just buy a couple Festool bits if you are worried they will become unavailable.

I've been watching some of the old Festool Live videos on the MFK 700... but the format on those is not the best for learning.  Is there a better video series I should checkout?

Festool DE and AUS both tend to have deeper instructional videos.  The AUS one is mostly a manual thing.  Frank on DE has the same thing Sedge covers in USA but with far less yelling.

* OFK is the predecessor to the MFK and hasn't really changed too much.  AUS has the MFK guide.

 
FWIW I did end up buying the MFK 700 way back when in 2016 and use the Freud 16-103 bit.  Works like a charm for me with 0 degree base on wood edge banding.  Just used it on a project this year.
