What would be the minimum clearance between the bottom surface of the table top and something underneath to still be able to insert the Festool clamps?

Helpm please.

It is a function of the hold diameter an the top's thickness.
Easiest would be a hole in board and measure the clamp when it is at an angle, or a garage crawler and do it from underneath. Chamfering the bottom edge of hole should help reduce clearance.

I can check when I get home, but it seems like a couple of inches.
 
I regularly see members here build a cabinet and then place a folded up MFT on top.  In the folded position the table measures 7 3/32" tall (according to the Festool specs) and if you subtract the 3/4 " top in that configuration it would be 6 11/32" underneath.  That is just one example.

I'd always want to be able to get a hand underneath to tighten or release the underside of a threaded holdfast, so I'd suggest as big as you need to get your arm underneath and turn a knob [wink]
 
I installed a drawer (for clamps) under my MFT/3 and the measurement between its top and the underside of the MFT top is about 58mm - and squeeze clamps or screw clamps go down and in easily.

I looked at this the other day. For the MFT it appears to be the width of the aluminum rail if you are just using the quick clamps. As others have suggested you may want room for you hand.

In order to be able to secure dog's etc. I placed 1 1/2" spacers under the corners of my folded up MFT. Any less space and I could not reach all the way to the center.
