Trim Carpenters opinion needed

The vast majority of my time is spent in my shop with only a small percentage, maybe ten percent, in the field doing the final installation.  While I've done some trim carpentry in the past I don't feel it has been enough to confidently price out the current job I've been approached on.  There are two archways that need to trimmed out, approximately 250' of crown, and 80' of wainscoting. For those of you guys that do trim work for a living do you charge by the linear foot or time plus materials?  The wainscoting is basic frame an panel, shaker style with no applied moulding or profiled edge.
 
I don't like by the foot pricing for anything, i am like you shop to field wise and i always do time and material for trim work. Usually the only people that ask for by the foot pricing is builders and i stopped doing that kind of work quite some time ago.

If the client is alright with that then it is the safest way to go.
