What's Cooking

Let's start with the dish that only works with tinned salmon. It's the salmon, hard boiled eggs (halved) and a cheese sauce. Served either with mashed potatoes as pictured - or if you want to make it look really nice, you can use a flat tray, put the salmon and halved eggs in the middle, and then use a piping bag to pipe the mashed potatoes like duchess potatoes around them. Then fill up with the sauce and bake.

Then it was time for a coffee w/ gingerbread made by one of the best German manufacturers in Nuremberg.

Yesterday we made these for today's breakfast, it's a yeast dough like you'd make for a currant loaf.

Do you have a recipe for the broccoli soup?

Is that homemade pickled herring?  Every once in a while I'll buy a jar of pickled herring in sour cream or wine sauce.
 
Sure, I'll translate & send it by personal message as soon as I get a chance. :)

The pickled herrings we get directly from the fishmonger, not in a jar or tin, they are pure fish aged in oak barrels, saltwater & fish enzymes. No additions.

I've been pretty time consumed with this new garage project but still, eating well & enjoying food will not be relegated to the garbage pits of hell in my lifetime.  [big grin]

So for New Years, I paired fresh king crab legs with sweet potato fries. I know it's a weird combo but the similarities of finger food for both items suggested I give it a try. It was great...king crab legs with clarified butter and then sweet potato fries with a cumin/mayo/sour cream aioli...it was a hit. Just spritz the crab with a bit of fresh lemon juice & you're in heaven.

I'm way behind uploading food pictures.  For Christmas we made a pork Crown Rib Roast.  I've been wanting to make one of these for a very long time.  We bought the prepared Crown Rib Roast at Whole Foods.  My wife made the little "hats" to go on the frenched bones.  We also made deviled eggs for Christmas.

Made a lasagna soup.  I didn't really like it at first, but I thought the leftovers were better the next day.

I made a clone of a Sausage McMuffin (again using mostly Walmart ingredients) along with some hashbrowns.  This was really good.  I liked it better than the version that uses Canadian Bacon.

I found a good use for the UV light on my Olight Arkfeld Pro.  It can be used to find shell in crab meat.

I made a clone of a "California Chicken Salad" that I used to get from J. Chow's Chicken, Ribs, & Salads in Montgomery Mall in Bethesda, Maryland.  Sadly J. Chow's closed on Christmas Eve 2023, but someone posted a copycat recipe of the salad on Facebook.  The overall taste is very close to how I remember the original.

On Sunday we made broccoli soup.  Thanks again for the recipe [member=61712]six-point socket II[/member]!  I think I might have added a bit too much potato and I probably shouldn't have used the immersion blender to mix in the cream as the overall soup became rather thick.  It still tasted great though!

All 3 dishes look so good Oliver!

I recently purchased this slicer from Amazon.  I tried slicing cabbage and onion on it, but honestly the manual mandoline slicer does a better job with both.  It did, however do a fantastic job shaving the beef!  The only downside is it is a pain to clean.

This past weekend I made something like a North Shore Beef.  I couldn't find any onion rolls so I used kaiser rolls instead and also used cheddar cheese instead of white american.  I did make sure to get James River BBQ sauce.

You're probably going to hate me after this. ;) When I buy fresh slices of cold cuts on the farmers market, they have a flywheel slicer from Berkel ... ->https://www.theberkelworld.com/en/slicers/flywheel-slicers.html

And the Hotel where we sometimes get brunch, has one of them as well on the restaurant floor ...

I've never seen anything produce thinner slices.

That said, your rolls look fantastic. Mouth watering! :)

Wow.  So those flywheel slicers are all hand powered?  They don't plug into an electrical outlet?  That's incredible!

The slicer I got was only $240 on Amazon.  That was more than $100 cheaper than other similar style slicers so I thought it was quite the deal.

I only recently developed an interest in cooking.  Neither my wife nor I love to cook; however, I started to buy Le Creuset cookware as an impetus to expand my repertoire and lo and behold I am really enjoying cooking.  Coincidentally this occurred at the same time I gave up alcohol.  I am now much more patient and focused.

I have made: lasagna, beef short ribs, homemade pizza, fajitas, chicken Parmesan, smash burgers, crepes, to name a few dishes.

Would you all indulge me and share with me some of your favourite meals that you like to make.  Ideally for a beginner cook.

My wife and I were sitting in a bar in Venice watching a young guy trying to impress a couple attractive young French women with his prowess using the Berkel and prosciutto. Quite the show and they did seem rather impressed.  [big grin]

I finally made some good hashbrowns and corned beef hash.  I bought a jug of Whirl and the real secret seems to be using a weight on top of the hashbrowns and corned beef hash.
