White Wash

I'm finishing some oak cabinet doors that I just made.  I'm using the white wash stain from General Finishes.  It's looking very nice but the grain is really raising on the oak and it's getting very rough.  What grit would be a good use to sand these doors down either in between coats or just a final finish?
 
I usually use generic scotch brite sanding pads that is rated fine (Maroon/Burgundy) after the seal coat. You can also use the gray ones that are rated ultra fine.
I don't sand after staining as I find it lifts the stain if I get overly enthusiastic which leaves uneven or blotchy/patchy areas in the stain. If I don't pre-treat with distilled water to raise the grain before a stain application (followed by a light sanding), I will seal the stain with two light coats of shellac and then knock the grain and nibs off after. I find this protects the color from my sometimes heavy handed sanding.
