please advise me on the best way of sealing and oiling solid wood worktops i currently use danish oil and wire wool between coats but i would like to know others methods

Are the worktops to be used in contact with foods or for woodworking or what other purpose(s)?  Will the finished top be exposed to water?  To other solvents?  To abrasion?  The suitability of a finish material is dependent on several factors, as indicated in the linked article directed to finishes for a workbench.

Some coatings manufacturer's offer food safe finishing materials.  Mineral oil is certainly safe, and easily touched up, but does not provide a shiny surface coating compared to others such as curing oils, lacquers, varnishes or epoxy types can.    Shellac is non toxic when dry, but is attacked  by the solvent action of water and alcohol.  Food Safe Finishes  Behlen's offers specific finish materials for food contact.  Other finishes may not be suitable for food contact or ingestion when in the can or applied, but are safe once fully dried and cured. Tung oil falls in that category, as does walnut oil; see Twisp  for examples of such finishes.  Polyurethanes may fall into this category, assuming all isocyanates are converted.  In addition to the recommendations you will receive here on FOG, I recommend you contact various finish manufacturers and describe specifically your intended usage and appearance objectives.  And to read the information posted by manufacturer's at their websites.

I used this in the States. I use Organoil Burnishing oil in Australia. I like the Organoil better.
