Can anyone recommend a bit to use with the OF1010 and edging plate for flush trimming?

This is a little vague, so most of the answers are going to be assuming some things.
The thickness of the edge that you need to trim is the first thing. It will determine the minimum cut length of the bit. For stability, I would use the shortest one that will do the job. Also get an 8mm shank, since the OF1010 can handle that. The thicker shank is less prone to vibration and deflection.
The next question is your location. That can have some influence on what you can find. Assuming in the US, 8mm can be a bit harder to find. They are out there, but not in the typical big box store. Lee Valley has a fairly decent selection and you can search for them by shank diameter.
In Europe, it is easier, there are more brands to chose from too.
Next, cut diameter. Personally, I am of the opinion that you should use a larger diameter bit for this task. The bigger diameter changes the "angle of attack" of the bit. This can reduce tear-out.
 
Yeah vague my bad.

Looking to trim 3/4 poplar edging on plywood shelves.  Want to rely on the edging plate for alignment, not on the bearing on the bit.  Wasn't sure if I should go for a straight bit or spiral compression, etc.

Was just hoping there was a defacto go to bit out there that people are using.

I would do this with a modified MFK700, but the bit would be the same in your case. The one I use is a 3/4" diameter, 1" cut length and 8mm shank. It is a simple straight bit.
Poplar is pretty forgiving as long as you avoid knots, and don't take off too much material at a time. If you have your edging within 1/16" or so, you should be fine.
A spiral or even sheer bit would be better, but will cost significantly more too. If it was Maple, especially if it was curly at all, the spiral would be a better choice.
Most of the sheer cut bits will be flush cut, with a bearing. Of course there is nothing preventing you from taking the bearing off. I have done that before, but it was only a 1/2" diameter.
 
Are there any 8mm shank shear bits? If not get a 1/4" shank bit for the OF 1100.

I use a spiral bit with a bearing as an added safeguard.  If you are not perfect on your settings or technique at least you have a bearing.

I'm not sure about the brand I have but if you can get one with an 8mm shank and have the collet for your 1010, do that.

Not a cabinet maker, so do things with fewer brains, tools, and much less space.

Sedge may have a vid.?  I know I do shelving/edging similar to the hack carpenter method, because I am a hack, like insider carpentry on youboob.

Just do some searching on lipping planer.
 
Vortex offers a 2-flute up-down compression spiral with a cutting edge length of 28 mm with a 8 mm shank...Viper series #3122.

Whiteside offers a 2-flute up-down compression spiral with a CEL of 1" with a 1/4" shank...UD2102.

Whiteside also offers the same bit with a top bearing...UDFT2100.

If you have access to CMT European bits they offer a couple of up-down spirals with 8 mm shanks...190 series.
