Building interior passage doors

Hello,

I am about to undertake my first attempt at building some interior passage doors. We are going to do a simple 1-3/8" single panel shaker door. Looking for advice in a couple of areas in particular. Aiming to match this style of door (http://www.simpsondoor.com/artwork-detail-drawings/detail-drawings/D-720-206-608-0800.pdf)

- Doors will be painted. Using stave core, poplar veneer engineered stiles. Any recommendations for the panel material, was thinking baltic birch?

- For joining the stiles and rails was leaning towards using the Domino. If I follow the 1/3 rule using 12mm, 2 on the top rail 3 on the bottom rail? Any advice on the size or quantities here?

- For routing the panel slot, any router bit recommendations? Are the adjustable ones useful for being able to tightly match panel material?

I did a similar one and used mdf for the panel.  Worked fine.  The only difference was I added a molding around the panel.
