Am looking at buying a used domino and was wondering how many actual variations of the 500 there have been. I know about the pins switching to paddles but have there been any other differences or models?

I believe there are only the two you mentioned, however, there are small changes to the offerings.  For example, classic or T-Loc Systainer and the newer units sold as a "set" come with the updated, micro adjustable cross stops.  Now for some bad news.  Some of the early paddle units had problems with the fence slipping.  I don't know of any way to know if the unit in question has this problem short of checking it out yourself.
