The psi of a CO2 bottle is going to vary based on the amount left in it and the temperature. There is of course a max that it can handle. But before that max is reached the safety valve will go. I do not know the volume (space wise) . But any CO2 container will have the max weight of CO2 that can safely be put into it on the labeling.
You can take them to stores that sell the Jac Pac and like systems for exchange. Or paintball stores, Dicks Sporting Goods, Walmart, and I am sure other places for refilling. In my experience refilling costs 1/3 -1/2 of the exchange prices.
The other option if you plan to use it a lot is to get a transfer valve, accurate scale, and lease a 80 pound cylinder from a welding shop.
