Opinion on Pantry counter top.

Hello Mentors,

I just finished up building my base cabinet, and will the base board and trim not removed, my total depth is 24 and 7/8 and I'm trying to do a Butcher block counter top. With door and drawer front panels, it might run over 25.
But most of them I'm able to get are 25 x 96.
What are my options? I did find 36 x 96, but wanted to know if there's an alternative to fix the back opening which is about an inch.
 
Are you going to have a back splash at the wall?
If using a typical 3/4" back splash, then add a 3/4" strip of something at the back side of the butcher block to push out the front edge. The BS will cover the non-matching material. Obviously you can alter the thicknesses as needed.
The other option is to buy the 36" wide top and use the left over as the BS.
 
Since it's a pantry I was not planning on adding a back splash. Would love to hear opinions on that as well.
So going with 36 and trimming is best option looks like
