First,  [welcome] to the FOG.  What a great first post!

You can't leave us hanging.  We would love to get more info about this really cool project.

This ranks in my mind as one of the neatest things I have seen here by a member.

Ingenious design on the cut table.  Would like to see you shoot some more video showing and describing how it is put together, the hardware involved... whatever you are willing to share.

Great 1st post and great assortment of Festools I see in the background.

easy to setup and take down, plus it stores in a very smal foot print. Very cool.
 
What a awesome cutting table, some sort of idea as to where to go for a plan would be great.
If this is a personal design which I believe it is, any chance you might want to share with the rest of us

omg... that is the coolest thing ever.  if you got drawings on a napkin, I can put it on sketchup to share.  in fact, i think I'm going to give it a try just using the video.

Excellent idea.  Having built a not so great cutting table, my only suggestion would be to make it lower.  I find a lower table easier when cutting across a 4' sheet.
Also hoping you will share construction details - particularly on the leg supports?
 
Thanks for the kind words.  I'm a little shy and not to handy with putting my thoughts on paper and you can tell from the videos, not much on talking. I do plan on making another video with close ups and telling more about the table. I would also like to see improvements y'all make if you decide to build your own.  Make it a shared continuous build.
The first table started out 24" wide and 6'6" long with the end sliding risers going out at angles.  It worked ok but was to heavy.  So I thought Ping Pong table, modified it and then came up with this table.  The first table used folding table legs from Home Depot and the swing arms for the plywood, I welded up from scraps.  This table I wanted out of as much wood as possible. 
It takes two sheets of 3/4" ply, casters and some hinges.  This one has piano hinges but they feel kind of  week.  I think i'm going to change that.  The base is 18" buy 24" with 5" locking casters.  Folded out it is 8' x 4'.  If you use clamps on your track the 8' gets in the way.  It could be shortened some.  The slides are 15deg sliding dovetail and the sacrificial risers are 3" tall.  These legs have a wood triangle attached with pocket hole screws to keep the legs from swing past 90deg and wings with 175 deg European cabinet hinges to keep them from folding back.  The height is 31" to the top of the deck + 3/4 inch slides + 3" sacrificial risers.
I needed something small I could move out of the way in my shop at home and this is what we have come up with so fare.  The shop you see in the first video is a class room and Festool demo part of a woodworking store I work part time called woodworkers paradise in Lumberton Texas.  The owner lets us use what we want as long as we lock up. Not a bad deal.  The draw back is every time I unload a truck of tools I find something I want.  Since I retired my part time job has cost me a lot more than I get paid.  I do meet a lot of good people, learn a lot and have more fun than anyone should.
I will try and put a video of the first table to give you other ideas.

Kingpen, you might want to consider Rockler wraparound piano hinges.  They are pricey, but can support a lot of weight, as they have two points of attachment.  I started on a Sketchup file last night; if you will sent me the dimensions of the leaves, and a side on photo of the bottom of the leaves, I will have most of it covered.  Also, how do you stop the sliding rails from sliding right off the table?

I will try and get some PIC's and post them this evening.
At the moment table 3 does not have stops but I plan on routing a grove half way across the bottom of the slide and put a screw in both sides of the table top so the sliding rail will stop about a foot out.  With the table top 24"  you only need to slide out each way 12" to get 4 feet.  I made the sliding rails as wide as the table for strength.  I have put a sheet of ply on the table and crawled along the center but I'm chicken to put my 220 Lbs out over the the edge.  It holds a sheet of ply quite nicely though.
 
That table is awesome! thanks for sharing. Makes me think about getting rid of my dedicated cutting table that is taking up lots of room!!
