Yeah, I use a couple of sawhorses with2 number 8 foot l9ng bits of 2x2 running lengthways and maybe 4 bits at about a metre long going crosways.
Thats basically my setup on site everyday and when needed my CTM extractor lives under the table out of the way.
 
When I first set up my shop,I used a couple of Work Mates. With clamping table tops I had any number of possabilities.

I think either could work. The idea of being able to walk between the two smaller units sounds good, but could turn into a potential for a snag as an outfeed table? If you cut thin sheets they might droop into the gap. This could be mitigated by pushing them together, but you would have to remember to do it.
I have a 4' x8' cutting table near my assembly table. It has a section of T-track embedded into the middle of it as the measured stop for the track saw cutting station. A single sheet works best for this. It also leaves space for the router table insert on the other end.
