Waterlox

I wouldn't consider Waterlox if you have kids unless you all are going on vacation for a couple weeks.  For hardwood floors you are going to want 4-5 coats, which will take at least a couple weeks to even a month to off-gass. As previously mentioned Waterlox is a pretty high VOC finish.  If you don't want to go the Poly route maybe consider a hard wax finish. 

This isn't a house that we live in... so there's no concern about VOCs (also, I don't think that anyone will sell the non-VOC compliant version of it to me, as i live in California).

I recently used the low voc version of waterlox, it was still very potent. I'd hate to smell the regular version.
I let my table I used it on sit for a month in the shop to cure. When I brought it home it smelled up the house for
at least two weeks.
