What age group would play with this toy?

I reckon that flower press would benefit from some quick release nuts!

You can also get the matching T bolts from Temu to make it easier.

Not that, but a cheaper version of this latch. It folds out of the way instead of being removed, and then folds back into a slot and the windnut can be tightened. I’ve seen (but not lately) a flower press with similar hardware but made with a commercial bolt and a regular wing nut. I cannot find the hardware, doubtless because I have no idea what it is called. Pictured is an antique yachts port (window).

But what is it called? (for search purposes) My every search effort has failed. I only found the photo by googling “Antique yacht window/port”. It is far more elaborate than what I had seen. The example I saw had an L-shaped threaded rod held in place with a metal stamping. A metal stamping at the top with a slot accepted the threaded rod with a wing nut. If it cost $1.00 each, it would have doubled the cost of the flower presses. So I am not sure I would have used it even if I found it. (Though the included specimen tweezers cost $1.00 each).
