What finish

I was using some scraps to make a serving tray (knowing it will be cut on occasionally) and the main women in my life don't love the typical Danish oil finish (the sample is included in the picture). They both want a finish that preserves as much of the natural maple and walnut as possible. Any suggestions?

The most "blonde" clear I have seen is from Vermont Natural Coatings, it is a whey base that is very hard. It sprays and brushes well. They have a sanding sealer and several different clear sheens.
