Caulk for countertop recommendation.

I have  been building countertops for our kitchen and I wanted to inquire about caulk and how to apply it and where.
Countertops and backsplash are from Hickory.
I have finished what I have gotten done with Surfix. I will try to add a picture.
For the sink countertop I am concerned about water seeping under the drop in sink (rim mount drop in) and the back splash.
I planned on glueing the back splash to the countertop. I could use screws if I need to caulk under the back splash we here it sets on the countertop. In both cases, would I run a line of caulk at the junction ?
So, here I get stuck and I need help from those who have done it.
I also want advise on which product to purchase. So, the back splash / countertop junction and the sink are the issues.

Another concern is the left side that sits over a dishwasher.
How to protect the heat and moisture generated.
Coat of poly ? Over the surfix or a coat of boiled linseed oil or Waterloo ?
Glued on aluminum sheets to be stolen from the kitchen supplies ?

I cant offer any suggestions, but I did see Steve Bace, the Festool trainer, do a quick demo on caulking. He was in the solid surface industry for years, and used an amazingly small amount of caulk, compared to the average DIY-er anyhow (me included!), and it was finished nicely in the corners using a small piece or laminate sample that had been cut to an angle

I took the "farm table" course from him in Las Vegas last year.

Learned a lot and met some great people. Him included.
 
I use 100% clear silicon caulk between splashes and top
And use an acrylic latex caulk for splashes to walls
For drop in sink many plumbers uses plumber's putty
 
clear mould resistant silicone .use masking tape to get neat line .a bit of washing up liquid will get u a nice smooth finish .there is metallic tape that comes with your dishwasher .it goes on underside of countertop to seal edge .on underside of countertop people use pva glue to seal edge that is not seen .it will stop it drying out from underside so when you oil it will alway be fully absorbed
