Hello,

is there a easy/safe way to use the Domino with a mortise depth setting of less than the 12mm setting on the tool?

I believe you can put a bit of PVC tube slotted over the guide rods to limit the depth.
 
There's a technique in the supplementary manual for the Domino, available at festoolusa.com that puts a piece of pvc pipe on the rod the Domino runs on to shorten the depth to a custom length.  You can also put a spacer between your workpiece and the domino.

But I'm not sure that a domino less than 12mm is going to do much for you - thats a very short tenon.

Try it on scrap first to make sure it achieves the result you are looking for.
 
It can be accomplished by placing a scrap of your desired thickness between the machine and your workpiece. Say you want an 8 mm plunge. Set machine to 12 and place a 4 mm thick piece of scrap between your workpiece and the cutter.
