Can the cordless drywall gun be used to secure subflooring if I use the proper collated screws

They have 2 versions of the DWC, the low rpm version can be used to screw underlayment/OSB. (I have an old 12V protool DWC, That's certainly not powerfull enough, I don't have the 18 V version, so I can't say if it's doable with the high rpm version)
Personally I use my old corded makita to screw down subfloors.

I am sure it could be used for subfloors but the rpm is really high and you might find control issues in that use. Or maybe power / torque problems.

Only the high rpm drywall version is sold in North America. Which is too bad.

The high RPM version will not work for subfloors.  If you hit a knot when doing drywall it wills stall and you have to try a different location or use another drill to finish driving the screw.
