How do I know what types (and size) material by CT 15 can handle?

for instance, there is some ground up small pieces of brick in my garage per the photo below. i'd like to use the CT 15 to pick it up but i'm questioning what it can/can't be used for.

It can be used for anything. All normal dirt.
 
When it comes to using my Festool extractors, I don't use them any differently than I would use a $50 ShopVac from a box store.  I may not drag, kick, and bang them around the way I would a ShopVac, but I don't use them for tasks any differently.

I suppose if I were to want to vac-extract soil from a hole or something, I may not use a bag and may use a ShopVac instead, but I use my CT Mini and Midi to clean up my floors in the garage just the same as any other vac.

I used my CT 15 to vacuum up dirt, pebbles, and small cement chips in my garage - very similar to your photo. No problems whatsoever.
 
I don't own a Festool extractor, sorry I know this the FOG.
However, i've used all sorts of domestic vacuums for cleaning up.  The only problems I've had with domestic vacuums is cleaning up plaster dust and chimney soot (both very fine).  I did suck too much water through my wet vac, but once it dried out it was OK.
I'd suggest that what ever you do, try not to fill the bag to max capacity.  I've had many bags break because there was too much in them!

Just my 2p worth.

This is not a good advise for Festool CTs.

Their bins and bags are specifically designed to handle filling up to 95% or so. Check out some SelfClean videos out there.

The bags in my Mini & Midi never make it to 100%, at 75% or sooner the suction drops so much I have to change them. Sometimes even way before that. I guess you don't notice it so much if you only suck up wood shavings, but fill it with dust and debris from a building site and the bags clogs up quickly.
