That cart is nice and stable.  Have the wings too.

Have you used the cart and wings on an uneven lawn, sloped yard/driveway or a dirt yard that hasn't been landscaped yet?

I also see that your cart butts up to 2 mft that are connected.  That adds all the support you need for wider boards.  That's a nice setup but it's also an expensive setup.  If I didn't need portability then your setup is the one I'd want to use or a very close variation of it.
 
I have the Bosch Gravity Rise saw stand for my DeWalt miter saw.  I'm thinking about buying the Kapex but I want to keep my Bosch Gravity Rise stand.  Has anybody here used the Kapex on the Bosch Gravity Rise?  Thanks but if I can't use the Bosch stand my wife won't agree to let me buy the Kapex (at least not yet).

#3 : Stablemate mounted on removable board -- weights a ton. I might add an extension so I can use it with the MFT3 too.

My first setup was a Stablemate and cheap wings.

3) & 4) .. I use a Rousseau 2950 with their flip stop connected to custom wings. For small jobs and punch work I don't use the wings. This stand stays up 99% of the time and only the saw is taken home in the afternoons.

I build kitchen cabinets. So I normally work in the room or in the garage or our shop. We have two MFTs because one was damaged in shipping and bought it at a discount. Also in regards to ripping wider boards. We just use the pink rigid foam insulation throw it on the floor and use the track saw TS 55. The double tables are nice just not needed for the ways we do things.
