If you are considering french doors, also think about old-school hinged carriage doors. You can build your own, insulate them if you'd like. Continuous geared hinges let the doors into the jamb, so the jamb stops will seal out weather, and they tend to hold their alignment even on heavy doors. Strap or butt hinges are cheaper, and work fine, but may need adjustment over time.

Is this garage built over a crawl space? My garage is and it developed a very similar looking crack. I had to have the support structure replaced.
I have a whole house attic fan and it is very effective except when the humidity is very high. If you use a sliding door, you will have a screen and it will keep the mosquitoes out. Screens for double doors seem gimmicky.
Note: Whole house attic fans make a significant amount of white noise. They also bring in dust and pollen. The noise does not bother me, but some find it annoying. The belt driven fans are quieter (and more expensive). Opening a door will significantly reduce the air flow through the windows.
A smaller thermostat controlled attic-only fan will improve AC performance. But you would not have an attic-only, and a whole-house fan going at the same time.
